Take a bowl to prepare the marination. Add olive oil, garlic, oregano, cumin powder, smoked paprika, black pepper, soy sauce, salt, and a teaspoon of lemon juice.
Whisk everything until it is well combined.
Then, pound chicken and mark slits and place the chicken filets in the marination. Keep it aside to rest for 1 hour and 30 minutes.
Meanwhile, prepare the green sauce in a blender. Add mayonnaise, green chili, yogurt, garlic, jalapeno, and salt.
At last, add some fresh cilantro to the the blender.
After blending all the elements you can achieve green silky smooth sauce for Peruvian chicken.
If you want to follow the Roasting method, then once the marination time is over, place the chicken pieces on the baking tray greased with olive oil.
Place the baking tray in the oven and roast the chicken at 200 degrees centigrade for 40 minutes.
Besides roasting, you can also grill the marinated chicken pieces in the skillet.
Finally, squeeze half lemon and garnish it with fresh cilantro to enjoy.
