For Green Curry Paste

  • ½ cup Green Thai Chilies
  • cup Coriander Stem
  • cup Lemongrass Stalk
  • cup Thai Basil Leaves
  • cup Shallots
  • cup Garlic Cloves
  • 2 tablespoons Cumin
  • 2 tablespoons Coriander Seeds
  • ½ cup Kaffir Lime Leaves
  • 2 tablespoons Galangal
  • 1 tablespoons White Pepper Powder
  • 1 teaspoon Salt

For Curry

  • ½ cup Water
  • ½ cup Bamboo Shoot
  • ½ cup Coconut Milk
  • 2 sprigs Snow Peas
  • ½ cup Red Spur Chillies


  • Prepare the green curry paste by blending green Thai chiles, coriander stem, lemongrass stalk, Thai basil leaves, galangal, shallots, cumin, coriander seeds, garlic cloves, and kaffir lime skin in a blender.
  • Preheat a large skillet, add oil, green curry paste, and water to the skillet.
  • Further, add kaffir lime leaves, bamboo shoot, and coconut milk.
  • Bring the curry to a boil.
  • Then, add chicken breasts and let the chicken cook over medium flame for 20 minutes.
  • At last, add salt, snow peas, and red spur chilies. Cook for another 5 minutes until the curry is frothing.
  • Garnish the curry with chopped basil leaves and serve warm.
