For The Soup

  • 2 Russet Potatoes (medium-size)
  • 3 tablespoons Butter
  • 4 cups Chicken Stock
  • 1 cup Half-And-Half
  • 1.5 cups Instant Mashed Potatoes
  • 1 cup White onion (diced)
  • 2 tablespoons Flour
  • ½ teaspoon Basil
  • teaspoon Thyme
  • 1 teaspoon Salt
  • ¾ teaspoon Pepper

For Garnishing

  • ½ cup Cheddar Cheese (shredded and divided)
  • ¼ cup Cooked Bacon (crumbled and divided)
  • 2 Green Onions (chopped and divided)

  • Before baking the potatoes, make a slit in it.

  • Bake the potatoes for 10 minutes in a preheated oven at 180 degrees C.

  • Meanwhile, in a pan, add butter, onions, and sauté it until translucent.

  • Now, add flour to the saucepan and mix it to make a roux.

  • Add some chicken stock to the pan and mix it well.

  • Once mixed, add half and half and stir it well.

  • It’s time to add some instant mashed potatoes into this mixture to give it a more creamy texture.
