Tamale Dressing Recipe

Tamale dressing has chopped tamales combined with herbs and fresh veggies. This dressing goes well with many Thanksgiving dishes. It's perfect for the stuffing recipes. Tamale dressing is loaded with the flavors of chicken and is cooked with chicken stock to have more flavors. It's seasoned with salt and pepper and has the aroma of parsley, chives, and celery.

Ingredients
  

  • 1 pound Frozen Green Chile-Chicken Tamales
  • 5 cups Chicken Stock
  • 1 tablespoon Olive Oil (plus more for pan)
  • 1 Large Yellow Onion (chopped)
  • 3 Large Raw Golden Yellow Beets (peeled and finely chopped)
  • 22 ounces Country Bread (cut into 1/2-inch cubes)
  • 8 ribs Celery (chopped)
  • 1 cup Fresh Flat-Leaf Parsley (chopped)
  • 3/4 cup Fresh Chives (chopped)
  • 3 tablespoons Fresh Sage (chopped)
  • 1 teaspoon Freshly Ground Black Pepper (to taste)
  • 1 teaspoon Kosher Salt (to taste)

Instructions
 

  • In a skillet over medium heat, cook the tamales as described on the package.
  • Transfer the tamales into a bowl and add oil to the skillet.
  • Toss in onions, beets, and celery. Season them with salt and pepper. Cook them for about 15 minutes until these veggies are soft.
  • Now, add chicken stock to the skillet and scrape up the stuck-on brown bits.
  • Bring this mixture to a boil and remove immediately from the heat. Transfer this to another bowl.
  • Add bread along with chopped tamales, herbs, and tomatoes to the bowl containing stock and veggies. Again, season with salt and pepper.
  • Transfer the mixture from the bowl to the greased baking pan and cover it with buttered foil.
  • Bake it in the preheated oven (325 F) for about 25-30 minutes. Uncover the pan and bake again for 5 to 10 minutes until it’s golden brown in color.
