Alton Brown's Onion Dip Recipe

Alton Brown's onion dip has mildly seasoned onion cooked and combined with mayonnaise and sour cream. This onion dip is spiced up by adding garlic powder, salt, and pepper. These onions are deglazed by adding Sherry vinegar. This creamy smooth dip can be enjoyed with any Thanksgiving side dish.

Ingredients
  

  • 4 Yellow Onions (peeled)
  • 1/4 teaspoon Baking Soda
  • 1 tablespoon Kosher Salt
  • 1 tablespoon Dark Brown Sugar
  • 1/4 cup Olive Oil
  • Sherry vinegar (deglazing)
  • 1 1/2 cups Sour Cream
  • 3/4 cup Mayonnaise
  • 1/4 teaspoon Garlic Powder
  • 1/4 teaspoon Freshly Ground White Pepper

Instructions
 

  • Transfer thinly sliced onions to a large pot over medium heat. Add dark brown sugar, salt, baking soda, and pepper to it. Toss the onions in the pot for a minute and then let them rest for about 10 minutes.
  • Drizzle some olive oil in the pot and set the pot over high heat. Then, cook the onions. After the onions are golden brown in color, reduce the heat to medium and cook further for about 15 minutes.
  • Deglaze the onions using sherry vinegar and water. Now, reduce the heat to low and continue to stir. Scrap up all the bits of onion from the bottom of the pot and when the onions are dark golden brown in color and are reduced by 1.5 cups in volume, remove them from the heat. Keep it aside to cool completely.
  • Add a half cup of these caramelized onions to a bowl. Combine them with mayonnaise, sour cream, white pepper, and garlic. Cover the bowl tightly with plastic wrap and refrigerate it for at least an hour before serving.
