In a food processor, add half of the flour and all of the butter and then mix them. Make sure they are mixed well and there are no lumps formed.
In a large bowl, add the remaining flour with mixed spices, ground ginger, and baking soda to and mix. Add the flour and butter mixture from the food processor and brown sugar to this bowl and mix.
In a medium bowl, whisk eggs and golden syrup and add them to the flour mixture as well. Mix everything and knead the mixture using your hands into a smooth dough.
Also, keep your oven preheated to 200℃. Then, divide the dough into four parts. Roll one part of the dough at a time on parchment paper to a thickness of about 5mm. Trim the edges and then cut small pieces from it to make the gingerbread house. You’ll need four equal parts to make the bread walls and two big equal squares for the roof.
Place the parchment paper on the baking tray and bake them for about 8-10 minutes until they have a rich brown color.
Then, take them out and if you want, cut little windows and doors in the wall pieces of bread. Now, take the icing sugar and mix it with some water until you have a thick icing. Add this to a piping bag.
Arrange the walls in a way they make a square room and glue the walls with the icing. Then, wait until they are set. After that, arrange the pieces of bread for the roof and use the regal icing balls to set them.
Decorate the houses with the remaining icing, sugar, and sprinkles. Your mini gingerbread houses are ready!
