Paula Deen's sweet potato gratin looks like a dish straight out of Hollywood feast. The 'gratin' or the top crust is made with cheese and caramelized onions. The sweet potatoes are layered with cheese and a creamy sauce. Once baked, you get delicious layers of potato, cheese, and a crispy top.
Get the preparations out of the way and preheat your oven to a temperature of 350℉. Also, keep the baking dish ready by greasing it with non-stick cooking spray.
Then, heat oil in a large skillet over medium heat and add half of the sliced onion to it. Cook them for about 5 minutes and then reduce the heat to medium.
Cook the onions for about 15 minutes until they turn dark brown. Sprinkle half of the brown sugar and cayenne pepper on it. Remove the onions from the skillet using a slotted spoon. Repeat the process with the remaining onion, sugar, and cayenne.
Now, melt butter in a small saucepan and add the flour to it. Stir continuously with a whisk for 2 minutes. Then, add half-and-half to the pan slowly and keep stirring.
Add dijon mustard, smoked paprika, pepper, and salt to it. Cook it while stirring until thick and then remove the pan from heat.
Now, take the baking dish and layer half of the potatoes on the bottom of it. Pour half of the sauce over the potatoes and add a layer of one cup of parmesan cheese.
Repeat this process to make another similar layer and top with the caramelized onions.
Cover the baking dish with aluminum foil and place it in the oven. Bake the dish for about 30 minutes.
After that, remove the foil from the baking dish and bake them for 15 more minutes until the top looks brown and crusty.
Take the dish out of the oven and let it rest for 10 minutes. Then, garnish with a little parsley and dig in.
