Gordon Ramsay mini apple galettes are delicious and make for a great holiday dessert. The galettes are made with a sweet shortcrust pastry and an apple filling. The pastry and filling for the galettes are both really easy to make.
225gAll Purpose Flour (plus some more for dusting)
170gCold Butter (diced)
2tablespoonsPowdered Sugar
1Egg (beaten)
Ice Water
1teaspoonGround Cinnamon
½teaspoonKosher Salt
For The Filling and Assembly
1poundApples (peeled, sliced thinly)
Zest of 1 Orange
1Egg
1tablespoonHeavy Cream
1tablespoonFresh Lemon Juice
½teaspoonVanilla Extract
¼cupGranulated Sugar
1teaspoon Ground Cinnamon
½teaspoonGround Cardamom
¼teaspoonGround Cloves

Instructions
For The Sweet Shortcrust Pastry Dough
While you do all the prep, preheat the oven to a scorching hot temperature of 190°C.
Then, take a large bowl and add flour, powdered sugar, cinnamon, and salt to it. Mix these dry ingredients and then add the diced butter. Rub the butter with your hands to break them down into small pieces.
After that, add the beaten egg to it and mix. Then, add about 1-2 tablespoons of ice water to it. Add more water if needed. Mix everything with your hands until a rough dough with some loose crumbs is formed.
Then, knead the dough lightly using your hands and then roll it into two small dough balls.
Cover the bowl with cling film and place it in the refrigerator to chill for about half an hour.
Once the dough is chilled, take it out on a flour-dusted surface and roll it. The dough should be about 16-inch oval, 8-inch wide, and ¼-inch thick. Then, place a 6-inch plate on the dough and cut around the edges to make a 6-inch dough round. Discard the dough scraps. Make three more dough rounds in a similar way.
Now, take 2 baking sheets lined with parchment paper and place the dough rounds on them, two on each. Place the baking sheet in the refrigerator for 10 more minutes.
For The Filling
To make the filling, take a medium bowl. Then, add sugar, orange zest, ground cinnamon, cardamom, and cloves to it and mix.
After that, add the apples to this mixture and toss them so they get covered. Lastly, add vanilla extract and lemon juice to it and toss again.
For The Assembly
In a small bowl, add egg and cream and mix them with a fork.
Then, place the apples in the middle of the pastry dough, leaving ½ inch space at the sides. Repeat this process for all the pastry dough rounds.
Now, fold the sides of the pastry over the apples and crimp them a little. Brush the rims of the pastry with the egg wash. Lastly, sprinkle some demerara sugar along the edges of the pastry.
Place the baking sheets in the oven and bake the galettes for about 30-35 minutes until the pastry looks golden brown.
After that, take them out and let them rest for about 10 minutes. Serve the galettes with whipped cream, vanilla bean ice cream, or caramel sauce. This is Gordon Ramsay’s serving suggestion.
