For The Salad 1 small Romaine Lettuce (finely shredded) 1 Celery Heart (chopped) 1 Apple (cored, cut into 1cm pieces) 100 g Green Grapes (washed, halved) 200 g King Prawns (peeled, deveined) 1 cup Walnuts For The Dressing 100 g Greek Yogurt 1 ½ teaspoon Dijon Mustard 1 teaspoon Cider Vinegar ½ Lemon (juiced) 1 teaspoon Salt 1 teaspoon Freshly Ground Black Pepper (for taste)
Toast a cup of walnuts in a frying pan over medium heat until golden for two to three minutes.
Start by whisking together yogurt, mustard, vinegar, lemon juice, salt, and pepper.
Stir the ingredients well with a spoon until the dressing is made.
Put the washed and shredded lettuce leaves into a large mixing bowl.
Add diced apples and sliced grapes.
Sprinkle toasted and sliced walnuts over the lettuce.
Add chopped celery into a large mixing bowl.
Now, add peeled king prawns.
Spoon in the prepared creamy dressing and toss the salad to coat. Taste and adjust the seasoning as necessary, and then serve.
