1 ½ LBs Mutton 1 Large Onion 3 Large Carrots 5 Stalks Celery 1 Leek 2 Cloves Garlic ½ Cup Flour 2 tablespoon Salt 1 Sprig Rosemary 3 Sprig Thyme 1 teaspoon Peppercorns 1 Cup Red Wine 2 tablespoon Tomato Puree 4 tablespoon Olive Oil 2 ½ Cup Water
Take a bowl of meat along with another bowl of flour.
Throw flour on the meat.
Now mix the meat with the flour and add a pinch of salt.
Take a skillet and put the meat in it.
Let it sit for a minute until it's soft.
Again, take a skillet and add in some olive oil.
Add some finely chopped garlic and wait until it softens.
Add some chopped leek to the skillet.
After leek, add celery to it.
Throw onion in the skillet.
After onions, add chopped carrots it.
After mixing the ingredients well, take a sprig of thyme and a sprig of rosemary and sprinkle them in the mixture.
Sprinkle salt and pepper for taste.
Till the mixture gets soft, take tomato puree and keep it aside.
Pour the puree, carry red wine along, and mix.
Now, add some water to the mixture.
Lastly, add mutton and let it cook until it's tender.
