For Salmon 4 (8 ounces) Salmon Fillets 2 tablespoons Ginger (chopped) 1 tablespoon Granulated Garlic 1 cup Brown Sugar 1 tablespoon Grounded Black Pepper ½ cup Canola Oil ½ cup Pineapple Juice 1 cup Soy Sauce For Pineapple Chipotle Glaze 2 tablespoons Pureed Chipotle Chillies in Adobo Sauce 4 cups Sugar 1 cup Apple Cider Vinegar ½ cup Pineapple Juice ½ cup Soy Sauce
For Salmon In a large bowl, add pineapple juice, soy sauce, oil, brown sugar, ginger, and garlic and mix well.
Then, add salmon fillets to this mixture for marination and put it in the refrigerator for about 10 hours.
Now, heat a grill to medium high and drizzle some oil on it.
Take the salmon fillets from the marinade and place it on the grill. Cook them for about 5 minutes and then flip them and cook the other side as well.
For Pineapple Chipotle Glaze For the glaze, put chillies and vinegar in a blender. Blend them until smooth.
Now, take a stockpot and put the pineapple juice in it.
Then, place the stockpot over medium heat. Boil the juice until it is slightly reduced.
Now, add the Chipotle pepper mixture to it and cook for 3 more minutes.
Lastly, add soy sauce, vinegar and sugar to it and wait till the mixture starts to boil.
Set the glaze aside and let it cool. For better taste, you can keep the glaze undisturbed overnight.
For Serving Now, take the grilled salmon fillets and brush them with the pineapple chipotle glaze.
Your salmon fillets are ready to serve.
