Swamp Cabbage Stew Recipe
The recipe that I am going to share today is for the Swamp cabbage stew. Swamp cabbage is Florida's state tree. It is also known as the Hearts of Palm, as it is extracted from the center of the Cabbage PalmTree (Sabal Palm). The cabbage's outer part is bitter to taste and hence needs to be shed off with an ax or a sharp knife.

3 slices Bacon (roughly chopped) 2 heads freshly cut Swamp Cabbage (chopped) 1 Jalapeño Pepper 2 Onions (chopped) 1 can Tomatoes 1 cup Tomato Juice ½ cup Sugar 1 tablespoon Salt ½ tablespoon Freshly Ground Black Pepper 1 tablespoon Garlic Powder 2 sprigs Thyme
Firstly, fry the bacon over medium heat in a saucepan. Set aside on paper towels.
In a large stockpot, cook onions along with swamp cabbage in the leftover bacon fat.
Add in the tomato juice, canned tomatoes, jalapeño, sugar, garlic powder, and thyme.
Add salt and pepper to taste.
Put in the fried bacon to the mixture and fill half the pot with water and bring to boil.
Simmer the whole mixture for about 20-25 minutes until the cabbage is soft.
Serve it over rice with bacon crumbled on top.
