Fabada Recipe

Fabada is a great recipe for Spanish cuisine. This recipe is also known as Pork and Beans. It is one of Spain's traditional recipes. It tastes best when served along with red wine or Asturian cider.

  • ¼ pound Salt Pork
  • 1 pound dried Asturian Beans
  • ½ teaspoon Saffron Threads (crushed)
  • 10 cups Water
  • 8 ounces Spanish Chorizo Sausage (½ inch sliced
  • 8 ounces Serrano Ham (cut into ¼ inch cubes)
  • 1 Bay Leaf
  • 8 ounces Morcilla Sausage (½ inch sliced)


  • Soak beans in warm water overnight.
  • In a skillet, add 3 cups of water and bring it to a boil. Put the salt pork in it and boil it for about 6 minutes. Then, remove the skillet from heat and drain the water.
  • Now, drain all the water from the beans and put them in a pot.
  • Add water to the pot and boil the beans for about 16 minutes. When all the extra foam comes to the top, you can remove it.
  • Then, add saffron, diced ham, and the cooked salt pork to it. Let it cook on low heat for about 6 minutes.
  • Then, add morcilla sausage and chorizo and cook it for 5 more minutes.
  • Lastly, add the bay leaf. Cook it low flame for about 3 hours until the beans become soft.
  • Remove the pot from heat and let them rest for about 25 minutes. The fabada is ready to serve.
