Egg Bagels Recipe

Egg bagels get their yellow color and chewy and airy texture from the addition of eggs — specifically, egg yolks. The egg yolks enrich the bagel dough with fat which gives them a texture slightly more similar to a challah bread. But the shiny, gelatinized crust and the low hydration makes them unmistakably bagels.

Ingredients
  

  • 4 cups All-Purpose Flour
  • 2 Eggs
  • 2 Egg Yolk
  • ½ teaspoon Dry Yeast
  • 1 cup Warm Water
  • 1 tablespoon Olive Oil
  • ½ cup Sesame Seeds
  • tablespoon Sugar
  • ½ tablespoon Salt

Instructions
 

  • Start by preheating your oven to 400 degrees F.
  • Meanwhile, take a large mixing bowl and add water, yeast, and salt to it.
  • Mix it well and add sugar to the mixture.
  • In another bowl, beat the eggs and combine them with the yeast mixture.
  • Add four cups of flour to the mixture.
  • Mix it well to make dough. Cover this dough with a clean kitchen towel and rest for an hour.
  • After resting your dough, knead it on a plain surface with some dry flour and knead it well until it is fluffy and elastic.
  • Once the dough is ready, cut it into even small shaped balls and make a hole at its center with your finger.
  • Take a large pot and add water in it and allow it to boil.
  • Once the water is boiled, add these bagels in the water and let them cook until they rise on the top of the pot.
  • Take these bagels out once raised at the top of the pot, brush with egg yolk, and sprinkle some sesame seeds on them.
  • Now put these bagels on the baking tray and let them bake for 30 minutes until they change from white to a golden brown.
  • Once baked, take them out and let them cool and then enjoy your favorite mini bagels at home.

Notes
