Ingredients
  

  • 1 Medium sized Chicken
  • 180 grams Smoked Bacon Lardon
  • 17 Sun-Dried Prunes
  • 2 tablespoons White Wine
  • 1 tablespoon Vegetable Oil
  • 2 Chopped Carrots
  • 2 Leeks
  • 2 Celery Sticks
  • 2 Bay Leaves
  • ½ bunch Thyme Sprigs
  • 1 Packet Bread

Instructions
 

  • Take a saucepan and add in the oil. When it is hot enough, add in the chicken pieces and fry them till they get golden brown. Set aside.
  • Then, add carrots, bacon, leek tops and celery and fry them for 5-6 minutes till they turn golden brown too. Drain out the extra fat.
  • Now, add in the wine and quickly boil. Add in the chicken with herbs, cold water and boil it.
  • After boiling it, let it simmer for 40 minutes till the chicken gets soft.
  • Now, put the chicken on a plate, cover it with foil and keep it still it gets a little cold and then, add the soup into a pan and remove all the ingredients.
  • Keep it still and remove any extra fat after it rises up. Remove the bones from the chicken and cut them into medium-sized chunks.
  • At last, let the soup simmer along with leeks, chicken and prunes for about 20- 30 minutes and then serve it hot.
