For Rice Flour Batter
1 ½cupsRice Flour
¼cupAll-Purpose Flour
¼teaspoonKosher Salt
¼teaspoonGround Black Pepper
1 ½cupsIce Water
For Soy-Sherry Sauce
1cupHoisin Sauce
¼cupSoy Sauce
¼cupSherry Wine
2tablespoonsRed Wine Vinegar
1tablespoonSriracha Sauce
¼cupGranulated Sugar
2ouncesFresh Garlic (minced)
¼teaspoonCrushed Red Chili Flakes
Instructions
In a bowl, add rice flour, baking powder, salt, and pepper to make the rice seasoned flour. In another bowl, mix rice flour, all-purpose flour, salt, pepper, and ice-cold water to make the rice flour batter.
Now, take a third large bowl and add hoisin sauce, soy sauce, sriracha sauce, sherry wine, and red wine vinegar to it. Add garlic, sugar, and crushed pepper flakes to the bowl and mix to make the sherry soy sauce.
Place a large pan over medium-high heat and heat oil in it. Toss the chicken pieces in the seasoned flour and then dip it in the batter. Then, add the chicken pieces to the pan and cook them until they are light brown for about 3-4 minutes.
Pour the soy sherry sauce into the pan. Also, add the cashews and the green onions to the pan as well. Toss and cook the chicken in the sauce for half a minute. Your chicken is ready. Garnish it with sesame seeds and some more cashews.
