Cracker Barrel Meatloaf Recipe

Cracker barrel meatloaf has ground beef mixed with onions, crackers, and bell pepper. Eggs and cheese make the meatloaf tastier and soft. This meatloaf is seasoned with salt and pepper. The mixture of ketchup, sugar, and mustard is brushed on top of the meatloaf.

Ingredients
  

  • 2 pounds Lean Ground Beef
  • 1 small Onion (finely diced)
  • 1/2 cup Bell Pepper (finely diced)
  • 1.5 Ritz Crackers (crushed)
  • 3 Eggs
  • 4 ounces Cheddar (or Colby Cheese, shredded)
  • 1/2 cup Milk
  • 1 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Topping:

  • 1/2 cup Ketchup
  • 2 tablespoon Brown Sugar
  • 1 teaspoon Mustard

Instructions
 

  • In a large bowl add onions, cheese, bell pepper, cracker crumbs, and eggs to it. Now, add black pepper, milk, and salt. Mix them to combine and then stir in ground beef. Mix them again to combine but don’t over mix. Take a baking sheet or a pan lined with parchment paper and place the meatloaf on it.
  • Bake it for about 30 minutes in the preheated oven (350 F). Meanwhile, make the topping by mixing ketchup, brown sugar, and mustard. Remove the meatloaf from the oven and brush the topping. Bake for another 40 minutes until the internal temperature of the meat reaches 160 F. Remove and let it sit for 15 minutes before you start slicing it.
