Gordon Ramsay's mince pies are delicious Christmas dessert. This little pie has crispy golden crust with mincemeat filled in it. The filling (mincemeat) contains the flavors of dried apricot, almonds, golden raisins, dark rum, and brandy. Cinnamon, nutmeg, and all spice give a spicy edge to this dessert.
Take a large bowl and add pink lady apples, suet, golden raisins, diced dried apricots, brown sugar, orange zest, and orange juice. Mix them well to combine. Now, add lemon zest along with lemon juice, nibbed almonds, ground allspice, cinnamon, nutmeg, brandy, and dark rum.
Mix them until smooth and a little runny. Cover it with a lid and then refrigerate it for about 30 minutes. Brush the pastry in the mince tin with egg wash and pour in the mincemeat.
Place the star-sharped dough on top and brush it with the egg wash. Bake it in the preheated oven (180 C) for about 15 to 20 minutes. Remove from the oven and let it cool for a few minutes. Sprinkle some icing sugar and serve.
