Eggnog is the ultimate holiday drink and Gordon Ramsay's eggnog is the ultimate recipe for it. It has spicy overtones and a sweet smell of vanilla. The texture is rich, creamy, and smooth and leaves you with warmth. It is the perfect drink for a cold winter night.
In a large saucepan, pour the whole milk and cream. Simmer until it is thickened and well combined.
Then, add all the spices like nutmeg, ground ginger, cloves, cardamom, and cinnamon. Simmer the milk for at least 5-10 minutes.
Meanwhile, take a bowl and break two eggs. Separate the egg yolk and egg whites in different bowls.
Combine sugar with egg yolks nicely until it is combined well.
Further, add the egg yolk mixture to the saucepan. Let the complete mixture simmer for around 5 minutes to achieve the desired consistency. Turn off the flame when you see the bubbles forming and strain off the mixture to avoid any lumps.
Add a teaspoon of vanilla extract to enhance the aromatic flavors. Moving forward, add 60 ml of brandy to the eggnog mixture. Let it sit in the refrigerator for 1 hour to enjoy the chilled eggnog at home.
Finally, beat the egg whites with two tablespoons of powdered sugar until you see the soft peaks forming.
Now pour the eggnog mixture into the serving glass and top it up with the beaten egg white mixture. Garnish the eggnog with a cinnamon stick.
