For Panna Cotta 250 ml Full Cream 50 ml Whole Milk 50 g Caster Sugar Leaf Gelatin (soaked and dried after) A splash Rum (optional) For Pomegranate Glaze 1 cup Pomegranate Juice 2 tablespoons Caster Sugar
In a medium pot, add milk, cream, and sugar. Place it over medium heat and bring this mixture to a boil. You can add a little rum to it if you want.
After the mixture is boiled and the sugar is dissolved, take the pot off from heat and add gelatin to it.
Whisk this mixture until the gelatin is mixed properly and the mixture has thickened a bit and become smooth.
Then, take four shot glasses and pour this mixture evenly into them. You can also use big glasses or ramekins.
Place the glasses in the refrigerator and freeze for about 1 hour.
Meanwhile, take a frying pan and add pomegranate juice and sugar to it.
Place it over medium heat and reduce this mixture until it becomes a thick syrup. Allow it to cool.
Pour the glaze over the panna cotta and top with berries and chocolate shavings.
