For Pico de Gallo 2 Plum Tomatoes (chopped) ½ Jalapeno (chopped) ½ Red Onion (chopped) ½ teaspoon Fresh Cilantro Leaves ½ teaspoon Lime Juice 1 teaspoon Kosher Salt 1 teaspoon Freshly Ground Black Pepper For the Eggs 3 tablespoons Vegetable Oil 1 pound Fresh Mexican Chorizo (cut into slices) 1 small Onion (chopped) 8 Eggs 1 tablespoon Unsalted Butter 8 Flour Tortillas 2 Avocados (sliced)
For Pico de Gallo In a small bowl, add tomatoes, lime juice, jalapeno, onion, cilantro, salt and pepper.
Mix them properly.
Keep the bowl aside.
For the Eggs Place the large skillet with oil over medium-high heat. Add chorizo to it and cook for 5 minutes until it turns brown.
Add onions to the skillet. Cook them for about 4 minutes.
In a bowl, break the eggs and beat them until they will look frothy.
Before putting eggs in the skillet, stir the butter in the skillet. When the butter melts, pour eggs over the mixture and stir occasionally.
Transfer the mixture to a large bowl and serve it with tortilla and pica de Gallo.
