Ingredients
  

For Pico de Gallo

  • 2 Plum Tomatoes (chopped)
  • ½ Jalapeno (chopped)
  • ½ Red Onion (chopped)
  • ½ teaspoon Fresh Cilantro Leaves
  • ½ teaspoon Lime Juice
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Freshly Ground Black Pepper

For the Eggs

  • 3 tablespoons Vegetable Oil
  • 1 pound Fresh Mexican Chorizo (cut into slices)
  • 1 small Onion (chopped)
  • 8 Eggs
  • 1 tablespoon Unsalted Butter
  • 8 Flour Tortillas
  • 2 Avocados (sliced)

Instructions
 

For Pico de Gallo

  • In a small bowl, add tomatoes, lime juice, jalapeno, onion, cilantro, salt and pepper.
  • Mix them properly.
  • Keep the bowl aside.

For the Eggs

  • Place the large skillet with oil over medium-high heat. Add chorizo to it and cook for 5 minutes until it turns brown.
  • Add onions to the skillet. Cook them for about 4 minutes.
  • In a bowl, break the eggs and beat them until they will look frothy.
  • Before putting eggs in the skillet, stir the butter in the skillet. When the butter melts, pour eggs over the mixture and stir occasionally.
  • Transfer the mixture to a large bowl and serve it with tortilla and pica de Gallo.
