Chicken Fiesta Recipe

Chicken Fiesta is one of my favorite chicken recipes. The reason why it is my favorite recipe is that it is easy to make. It is also very healthy as it contains chicken and vegetables.

Ingredients
  

  • 2 Chicken Breast (cut into 1-inch cubes)
  • ½ cup Onion
  • 1 Red Bell Pepper (chopped)
  • 15 ounces Tomatoes (diced)
  • 4 ounces Green Chilies (diced)
  • 15 ounces Whole Kernel Corn
  • 15 ounces Black Beans
  • 1 cup Long-Grain White Rice
  • ¼ cup Cilantro (chopped)
  • 2 tablespoons Olive Oil
  • 1 ½ cups Chicken Broth
  • 1 envelope Taco Seasoning
  • 1 teaspoon Dried Ground Cumin
  • Salt (for taste)
  • Black Pepper (for taste)

Instructions
 

  • Take the chicken in a bowl and season it with salt and pepper.
  • Heat oil in a large skillet and put the seasoned chicken pieces in it. Cook it for about 10 minutes.
  • Put the cooked chicken pieces on a plate separately. Cover the pieces with foil and set it aside.
  • In another pan, heat some oil and add onions and red bell pepper to it. Cook the for 5 minutes.
  • Then, add chicken broth to it and stir continuously for around 5 minutes,
  • Now, add ¼ tsp salt, ¼ tsp black pepper, taco seasoning, cumin, tomatoes, corn, chilies, rice and black beans to it. Cook it for about 15 minutes with a lid.
  • After that, remove the lid and add the seasoned chicken pieces to it.
  • Cook it for about 10 minutes until the rice and chicken is cooked perfectly.
  • Sprinkle cilantro over it and serve!
