FRIENDS has always been my favorite TV show. I saw Rachel and Phoebe talking about unagi and salmon skin roll in one of the episodes and that made me interested in this dish. Also, the episode is extremely hilarious.

Ingredients
  

  • 2 cups Japanese Rice
  • 1 tablespoon Vegetable Oil
  • 2 cups Water
  • 1 ½ cup Short Grain Sushi Rice
  • ½ pound Salmon Skin
  • ¼ cups Vinegar
  • 1 tablespoon Sesame Seeds
  • 2 tablespoons Sugar
  • 2 teaspoons Salt
  • 1 tablespoon Tamari
  • 2 tablespoons Mirin
  • 1 bunch Watercress
  • 2 Cucumber
  • 1 Avocado (sliced)
  • 4-6 sheets Nori

Instructions
 

  • Rinse the rice 2 or 3 times to remove extra starch. Cook it in a rice cooker for 10 to 12 minutes.
  • Now, mix the rice with vinegar in a bowl. Add sugar and sprinkle sesame seeds over it and then, stir it properly.
  • Rinse the salmon skin and dry it. Sprinkle some salt on it. Heat oil in a pan and cook the salmon skin in it for about 3-5 minutes until it is crisp and golden color appears.
  • In a saucepan, add tamari, brown sugar, and mirin. Heat it until the sugar dissolves and the sauce reduces by half and thickens.
  • Spread the nori on rice in a thin layer. Lay some salmon skins, cucumber, avocado and cress along one edge. Roll them up and then cut it into bite-sized portions. Drizzle the pieces with the sauce. Your salmon skin roll is ready!
