A lovely comforting dish, this pork casserole is cooked slowly with in the oven. It's finished off with a good splash of cream and a sprinkling of spicy peppers. This pork casserole recipe can be frozen as batches in individual portions, making this homemade meal as convenient as any fast-food.

Ingredients
  

  • ½ pound Boneless Pork
  • ½ cup Cheddar Cheese (shredded)
  • ¾ ounces Condensed Cream Of Chicken
  • 1 tablespoon Canola Oil
  • ½ cup Water
  • 1 cup Brown Rice
  • 15 ounces Black Beans
  • ½ ounces Tomatoes (diced)
  • 3 tablespoon Salsa
  • 4 ounces Green Chilies (chopped)
  • 1 teaspoon Ground Cumin
  • 1 Jalapeno Pepper (chopped)

Instructions
 

  • Preheat the oven at 350°F.
  • Heat oil in a large skillet. Then, add pork, beans, condensed cream of chicken, tomatoes, chillies, brown rice, water, salsa, and cumin into it. Cook it for about 10 minutes.
  • Now, transfer this mixture to an ungreased baking dish. Place it in the oven and bake it for 30 minutes.
  • Take it out and add grated cheese on top. Leave it for 5 minutes. Garnish with chopped Jalapeno peppers.
