Ingredients
  

  • 2 tablespoons Powdered Ube
  • 3 cups Heavy Cream
  • 1 ½ cups Whole Milk
  • 1 cup Egg Yolks
  • 1 cup Water
  • 1 ½ cup Ube Extract
  • 1 cup Granulated Sugar
  • 2 teaspoons Salt

Instructions
 

  • Puree the powdered Ube in a saucepan with water until smooth.
  • Keep this saucepan on low heat and cook it until it becomes thick.
  • Please turn off the heat and allow it to cool fully.
  • Combine the heavy cream, whole milk, and sugar in a medium saucepan.
  • Heat over medium heat, occasionally stirring, until the sugar has dissolved and the mixture is steaming.
  • In a separate mixing bowl, whisk together the egg yolks until smooth.
  • Gradually pour the hot cream mixture into the egg yolks, constantly whisking to prevent the eggs from curdling.
  • Pour the mixture back into the saucepan and heat over medium-low heat, constantly stirring, until it thickens and coats the back of a spoon.
  • Remove from heat and stir in the Ube puree and salt.
  • Let the mixture cool to room temperature, then cover and refrigerate for at least two hours.
  • Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  • Transfer the ice cream to a freezer-safe container and freeze for at least eight hours or until firm.
  • Once firm, serve and enjoy your homemade Ube ice cream!
