- 1 pound Dried Navy Beans
- 1 tablespoon Oil
- 8 cups Water
- 2 Ham Hocks
- 2 cups Cooked Ham
- 2 Onions (chopped)
- 2 cloves Garlic
- 2 Celery Ribs (chopped)
- 1 Carrot (chopped)
- 2 Bay Leaves
- 1 teaspoon Thyme
- Salt (to taste)
- White Pepper (to taste)
Soak beans overnight in water.
Boil chopped ham in water for 2 hours.
Sauté onions, garlic, celery, and carrots in the cooking pan for five minutes.
Combine cooked ham, soaked beans, sautéed vegetables, water, thyme, bay leaves, and water in a pot.
Bring to a boil and simmer for 2 hours.
Season with salt and white pepper.
Remove bay leaves and serve hot.
