Ingredients
  

  • pounds Pork Loin
  • 3 quarts Cold Water
  • 1 cup Maple Syrup
  • cup Dried Yellow Peas
  • 2 tablespoons Prague Powder
  • 1 tablespoon Mustard Seeds
  • 10 Peppercorns
  • 1 Bay Leaf
  • cup Kosher Salt

Instructions
 

  • In a large tall container add water, maple syrup, salt, cure, spices, and meat. Mix them properly.
  • In the injector, inject the brine and inject it to loin. Distribute the brine properly over the loin.
