Chipotle's sofritas is a vegan-friendly protein recipe. It's made with tofu, veggies, spices and sauces. When you take a bite, it's so satisfying and perfect choice to pair with taco or burrito.
Heat the oil in the skillet over medium heat. Add the onion and cook for five minutes.
Add the garlic and cook for an additional minute.
Add the crumbled tofu, vegetable broth, salsa, tomato paste, nutritional yeast, apple cider vinegar, cumin, chili powder, and salt to the pan. Stir to combine all of the ingredients.
Add tomato sauce, chipotle peppers, and poblano peppers to adobo sauce. Stir to combine. Reduce the heat to low and simmer for ten minutes.
Serve the sofritas in a burrito, taco, or bowl with your choice of toppings and sides. Enjoy!
