For The Marinade 1 kg Skinless Chicken Breasts 1 tablespoon Greek Yoghurt (heaped) 1 large Egg 1 Lemon (for juice and zest) 2 cloves Garlic 1 teaspoon Salt 1 teaspoon Black Pepper 1 teaspoon Sweet Smoked Paprika For The Crumbs ½ cup Breadcrumbs 50 g Parmesan Cheese ½ teaspoon Olive Oil
Cut all the chicken breasts into nugget-sized portions and transfer them to a bowl.
Add one tablespoon of yogurt to the bowl.
Break one egg into the bowl.
Season it with a good paprika, salt, and black pepper pinch.
Freshly squeeze lemon over the chicken breasts.
Use your hands to mix it up and marinate in the fridge for an hour.
Meanwhile, in a bowl, combine grated parmesan cheese with half a cup of breadcrumbs.
Add half a teaspoon of olive oil and mix it well.
Using forks, transfer the pieces into the crumbs.
Now, gently flick crumbs over each piece so they're well coated.
Transfer the coated nuggets to a baking tray.
Pop the tray in the oven for 15 to 20 minutes until golden and crispy.
