Ingredients
  

For The Muffins

  • 2 1/4 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Baking Soda
  • 2 tablespoons Poppy Seeds
  • 1 cup Sugar
  • 2 tablespoons Lemon Zest
  • 1 cup Greek Yogurt
  • 1/3 cup Whole Milk
  • 1/2 cup Unsalted Butter (melted)
  • 2 nos. Eggs
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Vanilla Extract

For The Glaze

  • 1 cup Powdered Sugar
  • 2 tablespoons Lemon Juice

Instructions
 

For The Muffins :

  • Preheat the oven to 425 degrees Fahrenheit. Line the muffin tin with muffin liners.
  • Sift the flour, baking powder, and baking soda together in a large bowl, mix in the poppy seeds, and set aside.
  • Zest 3-4 lemons to get enough zest for this recipe.
  • In a separate bowl, mix the sugar and lemon zest.
  • Add Greek yogurt, milk, melted butter, eggs, and vanilla extract and whisk until everything is combined.
  • Add the sifted dry ingredients and whisk until everything is combined.
  • Divide the batter into the lined muffin tins and place them on a baking tray, then bake in the preheated oven for 15 minutes.
  • At the 15-minute mark, insert a skewer in the center of the muffins, and if it comes out clean, your muffins are ready, or else bake for another 5 minutes.
  • After your muffins are ready, take them out of the oven and place them on a cooling rack. Let them cool completely.

For The Glaze :

  • Mix the powdered sugar and lemon juice in a large bowl until smooth.

Assembly :

  • After the muffins have cooled down, spread some of the glazes on top of each one.
  • Serve and enjoy!
