Ingredients
  

For The Cake :

  • 2/3 cup All Purpose Flour
  • 1 cup Caster Sugar
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Baking Soda
  • 3/4 cup Unsalted Butter (at room temperature)
  • 3 nos. Egg Whites
  • 1/2 cup Greek Yogurt
  • 1/2 cup Whole Milk
  • 1/2 teaspoon Peppermint extract (optional)
  • 1/4 teaspoon Salt

For The Frosting :

  • 1.5 lbs Confectioners Sugar
  • 1 lb Unsalted Butter (at room temperature)
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Whipping Cream
  • Green Gel Food Color

For The Assembly

  • 12 no. Ice Cream Cones

Instructions
 

For The Cake

  • Preheat the oven to 340 degrees Fahrenheit. Grease cake pans with butter and dusts them with flour, just enough to cover all the sides.
  • Crack the eggs into a large bowl and separate the yolks from the whites. Add milk, greek yogurt, and peppermint extract to the yolks and mix it all.
  • Sift the flour, baking powder, baking soda, and salt in a separate bowl and keep it aside.
  • In a stand mixer bowl, add the room-temperature butter and the caster sugar and whip them together until they are light and fluffy.
  • Add the dry and wet ingredients alternately, bit by bit, while scraping the bowl.
  • Mix until just combined, then transfer the batter into the greased and floured cake pans.
  • Place the cake pans onto a baking tray and bake for 35 minutes, after which, if you insert a skewer, it should come out clean.
  • Once done, place the pans on a cooling rack for 10 minutes. Then, remove the cakes from the pan and let them cool completely on the cooling rack.

For The Frosting

  • In a stand mixer bowl, add the unsalted butter at room temperature and whip till it is light and fluffy.
  • Add the confectioner's sugar to it, bit by bit, while mixing continuously.
  • Lastly, add some cream and vanilla extract, take ⅓ of the frosting into a separate bowl, and add a few drops of green food coloring.

Assembly

  • Place the first cake layer on a serving plate, secured with a dollop of frosting at the base.
  • Add white frosting onto the layer and spread evenly with a palette knife or offset spatula.
  • Repeat this process with the second layer and after the cake is topped with the third and final layer, place it in the refrigerator for 10 minutes.
  • Then, cover the cake with some of the white frosting, just enough to collect all the crumbs and for them to stick to the cake. Cool for 10 minutes.
  • After that, take the cake out of the refrigerator and cover it all over the sides and the top with white frosting until everything is covered.
  • Use a serrated knife to cut the sides of some of the ice cream cones and stick them to the sides of the cake. Also, cut some in half and place them on the cake.
  • Add the green buttercream to a piping bag with a star nozzle.
  • Pipe dollops of buttercream onto the ice cream cones, working your way from the bottom to the top.
  • Then, decorate with red MnMs and dust the cake with icing sugar. Slice and serve!
