Ingredients
  

  • 2 cups All-Purpose Flour
  • 2 cups Sugar
  • ¾ cup Butter (softened)
  • cups Cranberry
  • cup Pecans
  • 1 teaspoon Vanilla Extract
  • 2 large Eggs
  • Whipped cream (optional)

Instructions
 

  • Preheat the oven to 350°. Grease a 13x9-in. baking dish with butter and flour or line with parchment paper.
  •  Take a large bowl and beat the sugar and eggs until the mixture turns lemony in color and thickens.
  • Add softened butter and vanilla extract and beat for 2 minutes.
  • Stir the flour gradually into the prepared mixture. Make sure not to over-stir the flour; it should be combined.
  • Add cranberries and chopped pecans to the batter.
  • Place the baking dish in the oven and bake the cake until a toothpick inserted in the center comes out clean. This would take you about 45-50 minutes.
  • Take out the cake and set it on a cooling rack.
  • Slice the cake and enjoy!
