- 2 cups Sugar
- ¾ cup Butter (softened)
- 2½ cups Cranberry
- ⅔ cup Pecans
- 1 teaspoon Vanilla Extract
- 2 large Eggs
- Whipped cream (optional)
Preheat the oven to 350°. Grease a 13x9-in. baking dish with butter and flour or line with parchment paper.
Take a large bowl and beat the sugar and eggs until the mixture turns lemony in color and thickens.
Add softened butter and vanilla extract and beat for 2 minutes.
Stir the flour gradually into the prepared mixture. Make sure not to over-stir the flour; it should be combined.
Add cranberries and chopped pecans to the batter.
Place the baking dish in the oven and bake the cake until a toothpick inserted in the center comes out clean. This would take you about 45-50 minutes.
