Spinach Spoon Bread Recipe

Ingredients
  

  • 1/4 cup All Purpose Flour
  • 1 cup Cornmeal
  • 1 tablespoon White Sugar
  • 10 ounces Spinach
  • 4 tablespoons Unsalted Butter (melted)
  • 3 nos. Eggs
  • 3 cups Buttermilk
  • 1 1/2 teaspoon Baking Soda
  • 1 teaspoon Salt

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a saucepan filled with boiling water, add in the spinach and let it blanch for 30 seconds, just until it begins to wilt.
  • Once done, take the spinach out of the water and strain it to remove excess water.
  • Chop the spinach into small pieces and let it cool. Meanwhile, grease the baking dish with 1 tablespoon of melted butter, with the help of a pastry brush.
  • Dust the baking dish with flour, just enough to cover all the sides.
  • Sieve flour, cornmeal, sugar, salt and baking soda in a large bowl, keep aside.
  • In a different large bowl, add in the eggs, buttermilk and melted butter and mix it all up.
  • Add the dry ingredients into the wet ones, bit by bit and fold with a silicone or rubber spatula.
  • Lastly, fold in the chopped spinach and transfer the batter into the greased and dusted baking dish.
  • Bake the bread in the preheated oven for 40-45 minutes, however, at the 40 minute mark, poke the center with a knife and check if it comes out clean. If it does, your bread is ready and if not, let it bake for another 5-10 minutes.
  • Once done, take the bread out of the oven and let it cool down for 5-10 minutes, after which, you can serve.
