6 medium Green Zucchinis 4 ounces Spaghetti 2 tablespoons Unsalted Butter 5 tablespoons Parmesan Cheese (grated) 3 tablespoons Sunflower Oil 2 tablespoons Olive Oil 1 pinch Salt 2 Basil Leaves (torn into small pieces)
Heat two to three tablespoons of sunflower oil in a frying pan.
Add zucchini slices to the hot oil and fry them until brown.
Transfer the slices to a single layer on paper towels to drain the excess oil and pop it into the fridge overnight.
Heat olive oil in a skillet over medium heat.
Cook fried zucchini and season it with a pich of salt and cook, stirring occasionally, until it starts to release juices, soften, and break down.
Add a knob of unsalted butter to the zucchini and break zucchini into small pieces.
Reduce heat to low and toss in basil.
Grab boiled spaghetti with tongs and transfer it into the sauce.
Stir the spaghetti well until each strand is coated.
Mix in parmesan cheese and stir well.
