Slice one red onion, one bell pepper, black olives, and fresh parsley into bite-size pieces.
Cook the pasta by bringing water to a boil in a pot. Then add the pasta to the water, and stir a few times to prevent the pasta from sticking together or until it's still a little firm to the bite.
Once it's cooked, rinse it with cold water to halt the cooking process and prevent the pasta from sticking together.
Cook the diced onion and bell pepper in a saucepan until crispier.
Whisk together the grated parmesan cheese and crumbled blue cheese in a bowl of olive oil and white wine vinegar. Stir until everything is evenly mixed in.
Put the cooked pasta, red onions, bell pepper, and sliced olives on the serving dish.
Pour the dressing over the top and stir until everything is coated.
Chill in the fridge for a few hours before serving.
