Equipment

  • 2 Mixing Bowl
  • 1 Chopping Board
  • 1 Knife
  • 2 Saucepan
  • 1 Spatula

Ingredients

  • 16 ounces Trout filet (cut in half)
  • 10 Corn Tortillas
  • 1 cup Cabbage (thinly sliced and shredded)
  • 2 Tomatoes (cubed)
  • 1 bunch Cilantro (roughly chopped)
  • 3 tablespoons Spicy Mayo
  • 1 cup Toppings
  • 2 tablespoons Olive oil

Instructions

  • Over medium-high, heat a large pan and add olive oil. As soon as the oil is popping, add trout filets. Cook until the fish flakes, about 6 minutes on each side.
  • Remove the fish from the pan and place it on a paper towel-lined plate to remove excess oil.
  • Heat another mid-size pan over medium. One at a time, heat tortillas until lightly browned on each side (about 1-2 minutes on each side).
  • Chop cabbage and tomatoes to a bit-sized for toppings.
  • Season cooked Trout with spicy mayo until well-covered. Set aside for 15 minutes.
  • Add flaked fish, chopped cabbage, tomatoes, cilantro, and a lime wedge.
