In a saucepan, heat olive oil. Cook onions, garlic, and ginger in it for two to three minutes.
Add cumin powder, cloves, cinnamon, cardamom, ground pepper, coriander powder, black pepper, and nutmeg. Cook for three minutes.
Now add tomatoes, their juice, water, brown sugar, tamarind paste, and serrano. Mix well. Cook for thirty to forty minutes.
Remove the saucepan from heat. Add cilantro on the top and transfer the mixture to the food processor. Make a smooth BBQ sauce. Season with salt and black pepper. Keep it aside.
Preheat the grill pan to medium heat. Brush ribs with oil and season with salt and black pepper. Grill for three hours.
Baste them with barbecue sauce every ten minutes.
After grilling the ribs, brush them with more barbecue sauce.
