Equipment

  • Stand Mixer (with Paddle Hook and Dough Hook)
  • Bowl
  • Measuring cups
  • Measuring Spoons
  • Whisk
  • Bench Scraper
  • Brush
  • 9x13 inch Baking Dish

Ingredients

  • 4 cups All Purpose Flour (plus some more for dusting)
  • 4 Eggs
  • 1 1/2 teaspoon Active Dry Yeast
  • 1/2 cup Unsalted Butter
  • 3/4 cup Milk
  • 1/2 cup Granulated Sugar
  • 1 teaspoon Salt

Instructions

Making The Dough :

  • In a large bowl, add in the yeast along with 1 tablespoon of sugar and milk. Mix it with a whisk and let it sit for 10 minutes.
  • In a stand mixer bowl, mix together the flour, salt, rest of the sugar, yeast mixture and eggs.
  • Start by mixing all the ingredients at a low speed. Once the dough starts taking a smooth shape, you can increase the speed.
  • As the dough starts forming a shape, add in bits of soft unsalted butter, one at a time. It should take 10 minutes to incorporate all the butter into the dough.
  • After 10 minutes, the dough will stop sticking to the sides, which means it is ready. The dough should also be elastic in nature by then.

Resting The Dough :

  • Once the dough is ready, transfer it to a large bowl greased with olive oil.
  • Let the dough rest in a warm place for 1 hour.

Shaping The Dough :

  • Once the dough is properly rested and doubled in size, you can start portioning it out.
  • Cut out twelve portions of the dough and form round up each portion.
  • Place the rounded dough balls into a greased baking dish and let them rest for another hour in a warm place.

Baking The Brioche Rolls :

  • Once the dough is rested for an hour, you can bake it.
  • To bake the brioche rolls, place the tray in an oven preheated at 350 degrees fahrenheit.
  • Bake the brioche rolls at the same temperature for 25 minutes.
  • Once ready, serve immediately or store for later use.
