- 1 Cup Onion (sliced)
- 1 Cup Celery
- 2 Garlic (Smashed)
- 1 Cup Carrot (sliced)
- 750 Millimeter Dry Red Wine
- 5 Cups Beef Broth
- 1 Tablespoon Tomato Paste
- Salt (to taste)
- Pepper (a pinch)
- Thyme (a pinch)
Season short ribs with salt and pepper. Cook them in the dutch oven pot for fifteen minutes until golden brown. Transfer the ribs to the plate.
Preheat the oven to 275 degrees. Meanwhile, saute onions, celery, garlic, and carrots in the same dutch oven.
Stir in tomato paste, dry red wine, and beef broth, and bring everything to a boil.
