Ingredients
  

  • 2.5 Pounds Short Ribs
  • 1 Cup Onion (sliced)
  • 1 Cup Celery
  • 2 Garlic (Smashed)
  • 1 Cup Carrot (sliced)
  • 750 Millimeter Dry Red Wine
  • 5 Cups Beef Broth
  • 1 Tablespoon Tomato Paste
  • Salt (to taste)
  • Pepper (a pinch)
  • Thyme (a pinch)

Instructions
 

  • Season short ribs with salt and pepper. Cook them in the dutch oven pot for fifteen minutes until golden brown. Transfer the ribs to the plate.
  • Preheat the oven to 275 degrees. Meanwhile, saute onions, celery, garlic, and carrots in the same dutch oven.
  • Stir in tomato paste, dry red wine, and beef broth, and bring everything to a boil.
  • Return the ribs to the dutch oven. Cook for about five minutes until braised properly. Remove from heat
  • Transfer the dutch oven pot to the oven and roast for an hour. Short ribs are ready.
