Take a pot and boil two cups of water in it. Add a pinch of salt to boiling water. Once boiled, add two hundred fifty grams of macaroni to the water and let macaroni boil till it gets al dente.
Prepare a roux in a separate pot containing melted butter and oil by adding two tablespoons of flour.
Pour milk into the roux mixture and stir continuously to make Bechamel sauce.
Once you will reach desired thickness and consistency, add cooked macaroni to the sauce. Mix the macaroni well with the sauce with a wooden spoon.
Grate each cup of cheddar, Monterey jack, and parmesan cheese into the pot. Mix everything properly until everything is well combined.
Season your mac and cheese with salt, pepper, and hot sauce.
Combine everything well and add rotisserie chicken to the dish.
