Roast cashews in oil.

Mix chopped ginger root, honey, vinegar, soy sauce, lemon juice and zest.

Saute red curry paste. Add chicken and soy mixture.

Now, pour coconut milk. Add mushrooms and season it with salt.

Then, mix mangoes, cilantro and cashews. Boil.
