- 1 Loaf of Bread
- 3 tbsp Extra-Virgin Olive Oil
- 1 Large Onion
- 4 Stalks Celery
- 6 Coves of Garlic
- 2 Cups Vegetable Stock
- Freshly Ground Black Pepper
- Finely chopped Herbs
- Salt
- Cooking Spray

- For prepping, slice the bread into 1-inch cubes. Place on baking sheets and bake for 20 minutes at 200 degrees. This is done, so the bread absorbs the juices and stock well.
- Preheat the oven to 350 degrees and grease a baking dish with cooking spray.
- In a large pan, add the oil and place it over medium heat. Add onions and cook for about 5 minutes. Then, add the celery and garlic. Cook, while occasionally stirring, until the celery looks translucent.
- Add the vegetable stock to the pan. Stir and add salt and pepper to season.
