To prepare Tex-Mex shredded beef sandwiches, cook the meat in a slow cooker with chili seasoning and top it with barbecue sauce. Remove the meat and cool it slightly. Shred-it with 2 forks and remove the fat from cooking juice. Place it back in the cooker and heat it. Spread this on each slice and top it with cheese. Place another slice and serve.

  • 8 onion rolls (split)

  1. Place the roast in a 3 qt. slow cooker by cutting it in half. Season it with chili and add barbecue sauce. Cover it and cook on low flame until it becomes tender. This may take 8-10 hours.
  2. Remove the meat from the cooker and cool it down. Shred-it using 2 forks. Skim the fat from the cooked juice and place the meat back in the slow cooker to heat it. With the help of the slotted spoon, place half of the meat mixture on each slice. Top it with cheese and top it with another slice. 
  3. Serve hot.

You can make it spicy by adding a spicy sauce to it.
