Tarragon Chicken Recipe
- In a cutting board, cut the chicken breast into pieces.
- Cover those pieces with plastic wrap and mallet chicken breast, the season in with kosher salt, and fresh ground black pepper.
- In a bowl, add all-purpose flour and marinate the chicken breast with flour.
- At 400 degrees, preheat the oven.
- In a skillet, over medium heat add oil with chicken breasts. Fry those for 2 minutes or until it will turn golden brown.
- Add white wine, butter, fresh tarragon, garlic, and shallot in the pan over medium heat. Saute for 5 minutes.
- In the mixture, whisk chicken broth, dijon mustard, corn starch, and lemon zest.
- Heat the mixture until simmer and when it is simmering add kosher salt and fresh black pepper.
- Add chicken breast into the sauce we have with tarragon and keep it in the oven 10 minutes.
- When the chicken temperature reaches 165 degrees F, remove from oven.
