Spaghetti Bolognese with Gordon Ramsay’s Special Sauce: Ingredients

Ingredients Quantity
Olive Oil 2 tbsp
Rashers of streaky ‘Pancetta’ Bacon (Chopped) 6
Large Onions (Chopped) 2
Garlic Cloves (Crushed) 3
Carrots (Chopped) 2
Stick of Celery 1
Lean Minced Beef 1 kg
Red Wine 2 large glasses
Tomatoes (Chopped) 2 x 400g cans
Fresh or dried bay leaves salt and freshly ground black pepper 2
Dried Tagliatelle 800g-1kg

Note: Don’t forget freshly Grated Parmesan Cheese for serving.

Spaghetti Bolognese Recipe with Gordon Ramsay’s Special Sauce

  • Heat the oil in a large, heavy-based saucepan and fry the bacon until golden over a medium heat.
  • Add the onions and garlic, frying until softened. Increase the heat and add the minced beef. Fry it until it has browned.
  • Pour in the wine and boil until it has reduced in volume by about a third. Reduce the temperature and stir in the tomatoes and celery.
  • Cover with a lid and simmer over a gentle heat for 1-1½ hours until it’s rich and thickened, stirring occasionally.
  • Cook the pasta in plenty of boiling salted water. Drain and serve. Sprinkle a little Parmesan over the pasta before adding a good baleful of the sauce. Finish the topping  with a further scattering of cheese and some black pepper.

  1. I’m starting to worry. I’ve just started to make this and there are no herbs other than bay leaves. I can’t view the video for confirmation because I am in the UK. Most recipes like this have basil or thyme or oregano or all 3. Currently I’m just hoping it’s not a mistake. Please update me either with words of confidence or to confirm the herbs!! Thanks.

    • Just go with what’s written in the recipe as the video doesn’t yet coincide with the recipe written. Don’t worry bay leaves will give you the perfect flavor.
