But, I fell in love with the Red Velvet cake after I had the most delicious one at a friend’s birthday party.

Since then, I have been religiously trying to perfect my baking skills so that I can come up with a decent looking and tasting red velvet cupcake. And yes! Here I am today sharing the recipe with you all.

Here is the process of making moist and soft cupcakes. It is a simple procedure that you will want to try again and again.

  1. Make sure to pre-heat the oven to 350 degrees and place the cupcake papers in the cupcake pans.
  2. Whisk the dry ingredients (cake flour, cocoa powder, baking soda and salt in a medium bowl) in a mixer. Set aside.
  3. In a separate bowl, sift together the wet ingredients (beaten eggs- one at a time, sour cream, milk) until they are well combined. 
  4. It’s time to add some red food colouring and a few drops of vanilla extract.
  5. Add butter dollops to the dry ingredients and give it a mix, such that the mixture turns crumbly.
  6. Now, slowly add the wet ingredients to the crumbly mixture and swirl it until the mix is blended well.
  7. Pour the batter evenly into cupcake papers and bake for about 15-20 minutes or until the cake is bouncy to touch. You may prick a toothpick in the cake to check its status. If nothing sticks to the toothpick, then you are good to go. Keep aside to cool them down.

For the Vanilla Cream Cheese Frosting

Now comes my favourite part- preparing the Frosting. The Cream Cheese frosting goes well with red velvet cupcakes. Let’s see how its prepared.

  1. For the cream cheese frosting; whisk the powdered sugar in a large bowl and ensure that there are no lumps.
  2. Swirl the room temperature butter in a standing mixer until it is smooth.
  3. Now, add to it the cream cheese and beat together until the mix is incorporated well. You can now add the vanilla and salt.
  4. Slowly add the sifted powdered sugar and mix until combined.
  5. Your home-made, tangy Frosting is ready. Cool it down in the refrigerator for about 30 minutes before layering it on the cupcakes. You may add various flavours of your choice to the Frosting.

The creamy icing glides on the cupcakes as soon as you squeeze it on the top. Your cupcakes are ready to go inside your belly. Relish them with your friends and family. You’re going to love these.
