The first step in this recipe is to heat your oven to 425 degrees Fahrenheit. Meanwhile, split the potato in half and place it on the baking tray. Once the oven is sufficiently hot, add the tray to the oven and let the potato bake until it is soft on the inside, which should take about 1 hour. 

2. Make The Pie Crust

While the potato is baking, you can start making your pie crust. For that, add the flour, baking powder, and salt to a large bowl. To that, add the cold butter pieces and start rubbing them into the flour mix with the tips of your fingers. 

Do this as gently as possible, as overheating from your hands can melt the butter. The butter should be rubbed in a way that it forms small sand-like grains with the flour. Once the flour resembles a sand-like texture, you can add in the cold water. 

This step can also be done in a food processor if you would like; just make sure you don’t over-mix the dough. Once the cold water is added, knead it lightly a few times, just until all the ingredients are together and it forms a dough. Once the dough is formed, wrap it in plastic and refrigerate for 1 hour. 

3. Make The Filling

Once the purple sweet potato is soft enough, you can take it out of the oven and let it cool for a little while. As soon as it has cooled down, you can prepare the filling. For that, discard the skins of the sweet potatoes and transfer them to a large bowl. 

Mash the sweet potatoes thoroughly, making sure that there are no lumps. This process can also be done in a food processor to get a smooth puree. Once the sweet potatoes are mashed, add in the evaporated milk, brown sugar, eggs, melted butter, vanilla extract, nutmeg, salt, and allspice.

4. Line The Pie And Bake

The last and final step, once the dough has chilled for a sufficient time, is to bake the pie. But first, preheat the oven to 350 degrees Fahrenheit. Then, transfer the dough onto a heavily floured surface and pat it down. Then, start rolling the dough until it reaches a diameter of 12 inches. 

The thickness of the dough at this point should be somewhere around ½ inch. While rolling the dough, make sure you lift it from time to time and dust just enough flour so that it doesn’t stick to the surface or the rolling pin.

  • Add flour, baking powder and salt to a large bowl.
  • Add cold butter pieces to it and start rubbing the butter into the flour gently with your fingertips.
  • Once all the butter is rubbed in, the flour will resemble a sand-like texture. To that, add the cold water.
  • After adding the cold water, knead the dough lightly, just until all the ingredients come together and form a smooth dough.
  • Once the dough is formed, wrap it in plastic and let it chill for 1 hour in the refrigerator.

For The Filling

  • Preheat the oven at 425 degrees Fahrenheit.
  • Split the purple sweet potato in half and place it over a baking tray. Bake the potato for about 1 hour, until the flesh is soft.
  • Once the potato is done baking, take it out of the oven and let it cool down completely.
  • As the sweet potato is completely cool, scoop the flesh out in a large bowl and discard the skin.
  • Mash the flesh with a fork, until it gets to a smooth consistency.
  • To that, add the evaporated milk, brown sugar, eggs, melted butter, vanilla extract, nutmeg, salt and allspice and mix everything together until smooth. Your filling is ready.
