For Graham Cracker Crust:

  • Graham Cracker Crumbs – We will need 11/2 cups of graham cracker crumbs to prepare the crust. 
  • White Sugar – We will add ¼ cup of white sugar to add a little sweetness to the crust.
  • Butter – 6 tablespoons of regular melted butter will help us prepare and set the crust.
  • Cinnamon or Pumpkin Pie Spice – 1/4 teaspoon of cinnamon or pumpkin pie spice will add a touch of fall flavors.

Streusel Topping:

  • Brown Sugar – To make the streusel topping, we will need ½ cup brown sugar.  
  • All-purpose Flour – ½ cup of all-purpose flour will help us form the structure of the streusel.
  • Old-fashioned Rolled Oats – ¼ cup of old-fashioned oats will make the streusel topping chewy.
  • Butter – 4 tablespoons of regular melted butter will help combine all the ingredients and add to the taste.
  • Pumpkin Pie Spice – We will also add ¼ teaspoon of pumpkin pie spice to add flavor to the topping.

Pumpkin Filling:

  • Cream Cheese – To make the pumpkin cheesecake filling, we will need 8 ounces of cream cheese, softened to room temperature.
  • Sugar – In the filling, we will also add ⅔ cup of sugar to make it appropriately sweet.
  • Vanilla Extract – 1 teaspoon of vanilla extract will add to the flavor of the filling. 
  • Eggs – 2 large eggs at room temperature will help bind everything together.
  • Pumpkin Puree – Pumpkin puree is the most integral ingredient of this recipe. Make sure to use ⅔ cup pumpkin puree and not pumpkin pie filling.
  • Pumpkin Pie Spice – We will again add two teaspoons of pumpkin pie spice.
  • Caramel Sauce or Cool Whip – To decorate the pumpkin streusel cheesecake bars, you can use caramel sauce or cool whip or both.

Steps To Make Pumpkin Streusel Cheesecake Bars

1. Preheat The Oven and Prepare The Pan

Preheat the oven to 350°F and line a 9 x 13-inch baking pan with parchment paper. Allow the edges of the paper to hang over the sides of the baking pan. This will help you in removing the cheesecake out of the pan by keeping the crust intact. 

2. Make The Graham Cracker Crust

For graham cracker crust, you will need graham crackers crumbs. To make the crumbs, you can pulse the crackers in a food processor or just place the crackers in a Ziplock bag and crush them with a rolling pin. 

Now, take a large bowl and combine all the ingredients for the graham cracker crust and stir the mixture until it looks like wet sand. Add another tablespoon of melted butter if it still looks a little dry. Transfer the mixture to the lined baking pan and press with your hand to form an even crust.

3. Make The Streusel Topping

Take the bowl used to make graham cracker crust to combine the ingredients for the streusel topping. Mix the ingredients together and ensure the mixture comes together evenly. The mixture should form large crumbles. Set aside.

4. Make The Pumpkin Filling

In a stand mixer fitted or with an electric hand mixer, beat sugar, cream cheese, and vanilla until smooth. Stop the mixer and scrape down the sides of the bowl. Now add the eggs, one at a time. Scrape the bowl down again and add in the pumpkin puree and pumpkin pie spice, and mix until completely combined.

5. Assemble the bars:

Now that your crust, streusel, and pumpkin cheesecake filling are ready, pour the pumpkin filling into the pan already layered with graham cracker crust. Smooth out the surface evenly using a silicone spatula. Sprinkle the streusel topping over the pumpkin filling.

6. Bake The Bars for 45 to 50 Minutes

Place the pan in the oven for at least 40 minutes. Check if the cheesecake is baked by inserting a toothpick in the middle. If the toothpick inserted comes out clean, take the pan out of the oven. If the toothpick comes out with the batter on it, then let it bake for 5-10 more minutes and check again.

7. Cool The Bars And Refrigerate:

  1. Let your dessert cool to room temperature by placing it on a wire rack. Once cooled, place it in the fridge to chill completely.
