  1. In a pan add sugar, cornstarch, and cinnamon and stir them with peaches and lemon juice until peaches are coated evenly.
  2. Preheat oven for 300 degrees.
  3. Stir the mixture until it will become smooth.
  4. In a casserole dish pour the mixture and keep it hot in the oven.
  5. Whisk flour, baking soda, baking powder, and salt and keep it aside in the refrigerator.
  6. In a bowl add butter, brown sugar, egg, and vanilla and beat it until it will become fluffy.
  7. Stir the flour mixture into the creamed mixture until no flour is visible.
  8. Remove peach filling from oven and drop cookie dough onto peaches.
  9. Return cobbler to the oven for 30 mins.
  10. Cool for 10 mins.
