  1. Sift the flour before mixing the other ingredients. This will make your pancakes light and fluffy and prevent the formation of lumps.
  2. Make a well in the center of the dry ingredients and pour the wet ingredients in to mix. This will ensure that the ingredients combine properly and easily.
  3. Whisk the batter only to combine the ingredients, as overmixing will result in tough pancakes.
  4. Before pouring the pancake batter into the pan, ensure the griddle is heated properly. Otherwise, it will cook poorly and turn out flat and hard.
  5. While cooking the pancakes, reduce the heat to medium-low so they cook slowly and properly. 
  6. Flip the pancakes only when bubbles appear on the surface, and lift the edge of the pancake to check if the underneath surface has turned golden after 2-4 minutes. 
  7. Avoid pressing down the pancakes with a spatula as they cook. Doing so will squish out the air bubbles, resulting in flat and tough pancakes.
